Mrs. POW Report came up with a excellent recipe that uses your gingerbread house to create amazing cheesecake bites:
Gingerbread Cheesecake Bites
Filling"
16oz cream cheese room temp
2 teaspoons vanilla
1/2 cup granulated sugar
1/4 powdered sugar
1 cup gingerbread house blended into powder and candy removed (icing is ok to stay on and blended in the nutribullet until it became a powder)
1 teaspoon pumpkin pie spice
Coating:
1 container of white melting chocolate
Sprinkles to decorate
Beat cream cheese until smooth, then beat ingredient together, form balls, freeze for 30 minutes, then dip in melted white chocolate and immediately add sprinkles before chocolate hardens. Refrigerate after completion.
